You can get a lot of Pieces of Eight by completing deals on the Order Registry. For those who don't know, the Order Registry is a part of the Helm that is located in your Smuggler's Hideout. You unlock the Hideout as you progress through Spurluck's storyline. It can be found at Le Mont Muet in Sainte-Anne and you can return there at any time.
In your Order Registry you can see all the orders you have received and the number of Pieces of Eight you can get from them. The orders usually contain tasks such as delivering Helm Ware such as Opium and White Skull Rum. Once you have accepted an offer, it is your task to successfully craft Helm Wares with Helm Materials such as Sugar Cane. This process can be done in the Distillery which can also be found at Helm.
