Tomato sauce is one of the most important components of pizza composition. But is it really the tomato that matters, or can any sauce anchor the toppings? Pizza is a lot more versatile than we think. For example, a Roman-style pizza can be sauceless, or even round. I’m not trying to turn your pizza world upside down (maybe a little), but let’s give tomato sauce a try. Whether you hate tomato sauce or are just sick of it, you might be able to make an even better pizza with one of these alternatives.

How to make a REAL New York-style pizza sauce

If you really want to send your taste buds on a journey, coat your crust with a layer of sweet chili sauce. There are several; some are garlicky or gingery, and some are spicier, but generally the flavor is mild and sweet. Sprinkle cheese on top and top your pizza with something salty or sour. I recommend pineapple and SPAM.

Tomato sauce can provide a subtle balance, but barbecue sauce makes a bold statement. Trader Joe's makes a delicious frozen version of barbecue chicken pizza, but you can easily make it at home with results that would put store-bought pizza to shame. Simply stretch fresh pizza dough and spread it with your favorite bottled or homemade barbecue sauce. Top with cheese, cooked chicken slices, and red onions and bake as usual.

Baba ganoush is less of a sauce than a smoky, savory dip, but I’ll be damned if it isn’t amazing with bread and cheese. You can find a tub of baba ganoush in the refrigerated dip section of your grocery store, or you can make it at home with just a few ingredients.
