Since Samsung isn't releasing Android 10 for the Galaxy S7 and Galaxy S7 Edge devices, custom ROMs are your only option if you want Android 10.
At this time (October 1st), there is no custom ROM based on Android 10 available for the S7, so you'll have to wait until a proper ROM like LineageOS 17 or Android 10 GSI is available for the device.
