To ensure Ryan and Laura survive when werewolf Chris attacks, you must stab Bobby.
When Ryan stabs Bobby, he weakens him, which leads to his death later in the game when he comes face to face with a bigger threat. If his parents survive to this fight, Chris will kill them as well. So if you plan on eventually killing the Hackett family and survive, you can stab him when the time is right. Plus, Bobby's reaction after being stabbed is worth watching.
If you don't stab Bobby, he'll be strong enough to protect his family when werewolf Chris attacks and save his family members. At that point, Chris will turn his attack on Ryan and possibly kill him.
